Amrik Sukhdev is the best-known name on the Murthal dhaba strip and, for many, the definitive Grand Trunk Road pit stop north of Delhi. Entirely vegetarian and open around the clock, its vast dining halls and takeaway counters serve close to a dozen kinds of stuffed tandoori paratha — aloo, gobi, mooli, paneer and mixed — each arriving blistered from the tandoor under a melting slab of home-churned white butter.
